Amaranth grain can be used in countless ways: mix it with hot breakfast cereal, add it to baked goods by replacing one-fourth of the wheat flour with amaranth flour, or even add a handful of whole seeds to enhance leavened bread recipes. It also is
good
in soups where it will turn from a chewy grain to a thickening agent as it cooks down. Others report using it in crackers, granola, breading for tofu, pie crusts, toppings for casseroles or confections with molasses or honey. But if you want to
experience
the essence of the grain, try simply toasting it in a saucepan on
medium
heat, dry or with a little oil, then add an equal volume of
water
and a pinch of salt, cover and cook on low heat until the
water
is absorbed (about 15 minutes).

Toast a tablespoon of amaranth
seeds
a
time
in a hot, dry skillet. Continually shake or stir until the seeds pop. Eat them as a snack or use them to
top
soups, salads, and vegetable dishes. We’ve also heard that popped amaranth can be used to bread tofu or meat but haven’t given it a try yet.

We have heard and been recommended a
number
of leafy greens. We have been told about their benefits a number of
times
and been asked to include them in our diet. While kale, spinach, lettuce, fenugreek etc. Are quite famous, amaranth, also known as ‘chaulai’ has taken the backseat. Amaranth looks somewhat like spinach and is found mainly in the foothills of the himalayas and the coasts of south india. They come in various colours ranging from gold, red, green to

1. It was an aztec staple: amaranth was a key
part
of the diets of the pre-columbian aztecs, and it was used not just for food but also as part of their religious ceremonies. Sadly, when cortez and the spanish conquistadors arrived in the 16th century, amaranth crops were burned and its use forbidden. Fortunately, the plant was never quite eliminated. 2. It’s actually a
seed
: like quinoa, amaranth is not technically a grain but is the
seed
of the amaranth plant. One plant can
produce
up to 60,000 seeds. 3. Amaranth is gluten-free: amaranth doesn’t contain any gluten, which makes it a
great
choice for
people
who are celiac or gluten intolerant and an excellent way to boost the nutritional
power
of gluten-free recipes.

Once as fundamental to central and south american diets as corn and beans, amaranth virtually disappeared after the spanish banned it because of its use in aztec human sacrifice rituals.

The genus amaranthus has produced excellent food crops, lovely ornamental
plants
, and some of agriculture and horticulture’s most pernicious weeds. Native to south and central america, plants in this genus (amaranths) have spread around the
world
,
making
their way into korean side dishes , mexican candies, and jamaican callaloo. Some amaranth plants, such as love-lies-bleeding (amaranthus caudatus) are cultivated as ornamentals. The amaranth plants that turn up as weeds in farms, orchards and just about everywhere else are often collectively known as pigweed, although one (a. Tuberculatus/a. Rudis) is more often
called
common
waterhemp. Because there are more than 70 species of amaranth and there isn’t a
lot
of difference between them, it may be enough functionally to identify the plant as amaranth.
